• A Texan’s Asparagus, Bacon Wrapped

    I must admit that I love asparagus, but I REALLY love it when it is bacon wrapped! I also love that it is one of those favorite recipes that looks really cool and takes almost zero time to prepare AND is low carb, to boot!

    I'm making this for "just us" so I am using the entire spear. It I make for company, I often cut off the bottom portion of the spear.

    Ingredients

    Asparagus
    Bacon

    Preparation

    Because I cannot easily buy organic, I often soak any veggie that I cook in salt water for an hour or so. If you are not afraid of chemicals, don’t bother.

    Preheat oven to 350 degrees.

    Group asparagus spears. I used about six spears per group. Wrap tightly with bacon, remembering that bacon shrinks as it cooks. If you need to do so, use two slices of bacon on each grouping.

    Bake in any pan.* Check after 30 minutes and then periodically until your bacon is as brown as you want it. Just know that your tips will wilt if you cook it too long.

    The beauty of this recipe is that I can make one grouping for my own lunch or enough for every guest.

    *Don’t be fooled by this casserole pan. I have one horrible pan that I use every time I cook anything that has bacon on it. I removed to a clean casserole before photographing. :)
