• Bruschetta Balsamic

    Italian food makes me feel all warm and fuzzy inside!! Plus it’s easy when trying to feed a large dinner party. Bruschetta Balsamic is a fresh, simple and delicious Italian appetizer that can be prepared in minutes and enjoyed any time of the year. I like to call it Summer on Toast.

    Bruschetta Balsamic


    8 roma (plum) tomatoes, diced
    1/3 chopped fresh basil
    1/4 cup shredded Parmesan cheese
    1/4 cup shredded mozzarella cheese (optional)
    2 cloves garlic, minced
    1 tablespoon balsamic vinegar
    1 teaspoon olive oil
    1/4 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper
    1 loaf French bread, sliced


    In a bowl toss together the tomatoes, basil, parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.

    Chill for 1 hour so the flavors mesh all together.

    When I prepare I like to do the day before. I have found the flavors to be even more flavorful when left in fridge overnight.

    15 minutes before your party, brush the bread with olive oil and place olive oil side down on baking sheet and toast until golden brown.

    You can make 1 of two ways. First remove the toast and top with the cold mixture and boom your done, or flip the toast over on baking sheet, olive oil side up.

    Top with mixture and then sprinkle with mozzarella cheese.

    Place in oven until cheese is melted and its ready to serve.
