When Rickey and I first married, my mother-in-law was on an ambrosia salad kick. I thought it absolutely delicious, but my new husband was completely burned out on the dish and told me NEVER to make it for him!
So…I did what any good wife would do. I changed the recipe a tiny bit, called it something else and served it for years! Today, I thought I’d share the recipe with you. My photos are horrible, but I do love this salad.
Chunked Pineapple, 1 large can and its juice
Large Box Instant Vanilla Pudding Mix
8 Ounces Cool Whip
Coconut, to taste
*Mandarine oranges work well in this salad. Also, this is a 1970s recipe so it calls for Cool Whip. Today I usually use whipped cream, but either works fine.
Mix all together and refrigerate.
Of course, if you use whipping cream, you do have to whip it.
