• Easy Peesy Chicken Tortellini & Loaded Potato Boats

    This week we have a twofer for you, and both are DELISH!

    Easy Peesy Chicken Tortellini

    Easy Peesy Chicken Tortellini

    3 tablespoons Olive Oil
    1 Clove Garlic minced
    3 stalks celery chopped
    3 carrots, peeled and chopped
    1 onion diced
    10 oz fresh baby spinach
    2 cans cream of chicken soup
    2 cans water
    32 oz chicken broth
    Family size package of cheese or chicken tortellini, half cooked


    Saute’ garlic, celery, carrots, and onions in olive oil until tender

    Add cream of chicken soup and water. Give a good mix.

    Add Spinach and Chicken Broth give it another good mix.

    Add half cooked Tortellini.

    Simmer 30 minutes and serve.


    Loaded Jalapeno Baked Potato Boats

    Make as many as you want…. I normally just use two huge baking potatoes.


    1 stick of real butter

    salt, pepper, & garlic powder mixed

    1 jalapeno (may not use all, spice to taste)

    cheese ( I like the 3 cheese mix colby, cheddar, swiss)

    2 to 3 slices of cooked crumbled bacon

    Sour Cream for dipping

    I put potatoes in microwave for a quick fix. Normally about 12 minutes depending on potatoe size, Just make sure they are soft. You can bake but will take so long.

    Cut potatoes in half lengthwise and scoop out potato into mixing bowl.

    Turn Potato Skins upside down on baking sheet.

    Melt butter and brush onto skins

    Sprinkle Salt, Pepper & Garlic Powder Mixture on butter wet skins

    Bake in oven at 350 degrees for 10 mins (Some people like crispy skins, thats ok, just leave in longer. Keep a watch on them until you have reached your desired crispness)

    While skins are baking, chop jalapeno and add to patato in bowl.

    Also ad, a handful of cheese, a couple of sprinkles of the bacon (make sure to leave some for garnish) remaining melted butter, and salt, pepper to taste.

    Whip the potatoes.

    When skins are finished baking, flip over on baking sheet and fill skins with Whipped potatoes. Garnish with cheese and bacon. Put potatoes back into oven until cheese is melted.
