• Homemade Coconut Pie For Dummies

    I’m not a good coconut pie baker, probably because I just don’t make it often enough to be good at it. However, today’s recipe is one that even I can master. I made it first years ago to take to a dinner at my mom’s.

    She later told me how disappointed she was when she saw me walk in with this particular pie because she was expecting something much different. THEN….she tasted my pie, and she was hooked!




    4 Eggs
    1 Teaspoon Vanilla
    3/4-1 Cup Sugar
    2 Tablespoons Butter, melted
    ¾ Cup Flour
    2 Cups Milk
    2 1/2 Cups Coconut


    Preheat oven to 350 degrees.

    1. Beat all ingredients except flour, milk, and coconut.

    2. Add flour and mix well.

    3. Stir in milk and coconut.

    4. Pour into buttered 9” pie plate.

    Bake for about an hour, but begin checking after 45 minutes. The pie is done with a knife comes out clean. It usually cooks in my oven in 50 minutes.

    This pie is not a really sweet pie. It pairs well with ice cream, whipped cream, or a bit of sauce (sugar, canned milk, bit of coconut) drizzled over it!
