if you’re anything like me , i LOVE a good sweet & salty dessert. it’s the best of both worlds…and i also LOVE a good margarita….nothing beats it when spring & summer start coming around here in texas!!!

    there are PLENTY of margarita recipes out there, but i like the tartness of lemon pie, as compared to the creaminess to a KEY lime pie…so i have played around a bit and this is what i have come up with….the MARGARITA DESSERT BITE!!!! ***you can ALWAYS use this in a regular pie instead of bites, it works just as well**


    2 cups crushed rold gold pretzels

    1 stick of margarine (softened)

    2 TBSP sugar

    chop up pretzels in food processor until fine crumbs, add soft margarine and sugar. blend until it forms a dough (where it sticks together)

    make quarter sized balls and place in a mini-tart pan. use wooded tart press and dip in sugar, then press to form tart shells…..

    bake at 375 for 15 minutes. let cool, then use a toothpick to poke (at an angle) the center of each shell, twist slightly, and shell should release…then pull out and set aside.


    1 cup sugar

    2 TBSPS flour

    3 TBSPS cornstarch

    1 & 1/2 cups of margarita mix

    2 TBSPS margarine

    4 egg yolks, beaten

    few drops of green food coloring

    whipped cream

    quartered lime slices and dash of coarse sea salt, for garnish


    place margarita mix, sugar, flour, cornstarch in med saucepan and cook on med heat add yolks, continue to cook until mixture comes to a boil and thickens, remove from heat and add BITESmargarine and food coloring,  mix until smooth.


    fill pretzel crust tart shells up with margarita filling, top with whipped cream, sprinkle with a SMALL dash of coarse sea salt and top with a quartered like slice!!! chill until ready to enjoy!!!!
