• No Carb Oatmeal!

    I know you aren’t going to believe this one; I probably wouldn’t believe it either so don’t feel badly.

    It was actually a complete accident that I happened to make what I think is a wonderful substitute for oatmeal. I had just put a pan of cauliflower bread in the oven when our daughter called. She needed me to keep a sick little one, and I had to leave immediately. So…I removed the pan from the oven, took it with me, and just popped it into her oven when I arrived.

    Since I was busy, I let it cook a longer than usual and when I removed a piece from  the pan, it was a little crumbly. Not wanting to make a mess, I grabbed the first  thing I could reach, which happened to be a bowl. When I realized that the crumbs looked like oatmeal in that bowl, I decided to try it. Below is what I used


    Cauliflower Bread, omit salt and other spices you normally use and baked in oven.
    1 Tablespoon Peanut Butter
    A Bit Of Honey
    2 Tablespoons Half and Half

    Of course, you could use a bit of butter instead of peanut butter (but I really prefer the peanut butter) to save those carbs, and I found that a tiny bit of honey was plenty. For some reason, this sweetens easily. You might also prefer a little milk instead of half and half.

    This is not something that will work for you unless you plan ahead. If I had to get up and bake cauliflower bread before I could have breakfast, I would never do it! However, since I am really serious about keeping the carbs out of my life most of the time, this was a great find for me, and since I usually have cauliflower bread in the fridge, it is easy to have “oatmeal” as well.

    AND….the honest truth is that I really like the stuff!!  :)
