Preparing to start bottling at Brennan Vineyards

After a fast paced, very busy harvest with higher yields than we have ever had, things are starting to slow down here at Brennan Vineyards. All the wines have just about finished fermenting and are ready for the next phase in the winemaking process. The white wines from 2012 will be bottled early in 2013. So, the next steps for them are to get them clarified and filtered and then start working on the final additions prior to bottling. For the red wines of 2012, they will go into barrels once we take out the 2011 reds. It is also about time to start ordering bottles, corks, capsules & labels. We will need to design two new labels this year, as well. When we bottle, we will be introducing a 2012 Chardonnay and a 2011 Tempranillo. We barrel tasted the Tempranillo the other day, and it was very nice. Can’t wait to start working on the final blend.

Accomplished winemaker, Todd Webster, began his career in the wine business as Operations Manager for a distributor in Fort Worth. It was in that capacity that he met Trellise and Pat Brennan. He joined Brennan Vineyards and began his formal education in Viticulture and Enology at Grayson College and Texas Tech University. Todd plans to begin the Enology Certificate Program at Washington State University next year.
