• Sherry’s Coca Cola Cake

    Once again, my friends come to my rescue! Sherry Reynolds brought this cake to a chamber meeting and was kind enough to allow me to share it with all of you on United. Thank goodness for friends because I sure did not have time to bake myself this week!

    1 cup Coca Cola
    1/2 cup buttermilk
    2 large eggs, lightly beaten
    1 cup butter
    1 3/4 cups sugar
    2 tsp. vanilla
    2 cups flour
    1/4 cup cocoa powder
    1 tsp. baking soda
    1 1/2 cups miniature marshmallows


    In small bowl, combine Coca Cola with buttermilk.

    Set aside. In large bowl beat butter at low speed with mixer until creamy.

    Gradually add sugar, beating until blended.

    Add eggs and vanilla. Beat at low speed until blended.

    In small bowl, combine flour, cocoa and baking soda.

    Add flour mixture to butter mixture alternately with Cola mixture, beginning and ending with flour mixture.

    Beat at low speed just until blended.

    Stir in marshmallows by hand.

    Pour batter into a greased and floured 9 x 13 pan.

    Bake at 350 degrees for about 35 minutes until center of cake doesn’t jiggle when moved.

    Remove cake from oven and let cool 10 minutes.

    Spread Coca-Cola frosting over warm cake.

    Coca Cola Frosting

    1/2 cup butter
    1/3 cup Coca Cola
    3 Tablespoons cocoa powder
    4 cups powdered sugar
    1 Tablespoon vanilla


    In deep saucepan add butter, Coca Cola and cocoa powder.

    Over medium heat, stir mixture constantly to prevent burning.

    When butter has completely melted, remove pan from heat and whisk in the powdered sugar and vanilla until smooth and creamy.

      Fredda, you left out the sugar and sugar in the ingredients, how much of each????

      I forgot to give the amounts for the butter and sugar for the cake. It’s 1 cup of butter, softened and One and 3/4 cups of sugar. I checked the recipe to be sure it was all correct! My mind wanders apparently!
