Just like lots of others, this summer means BBQ, party’s, and FUN with friends and family!!!! i tried a new idea for a recipe that i thought of when we were planning our grilling and chilling extravaganza this weekend!!! i made SOUTHWEST COLE-SLAW….it was FUN, YUMMY and EASY!!!!!
our menu consisted of southwest pulled pork soft tacos and beans, so i thought about the cole slaw that so many serve with traditional pulled pork so i just twisted and jazzed it up to go with our southwest dinner party theme!!!!
1 full head of green cabbage (shredded)
1/2 head of purple cabbage (shredded)
1 red bell pepper (diced VERY small)
1 small purple onion (diced VERY small)
1/2 of a “bunch” of FRESH cilantro (chopped)
juice from 1 lemon and 1 lime
1/4 tsp ground cumin
garlic salt, pepper, season-all, TO TASTE
1 cup mayonnaise with lime (down the hispanic isle)
1/2 cup salad dressing (miracle whip)
add all ingredients in LARGE bowl and stir until mixed….chill in refrigerator until ready to serve. ENJOY!!!
