• Wendi – Real Men DO Eat Quiche!

ASPARAGUS QUICHEI have been playing with new recipes the last couple of weeks…..things that I NEVER thought my “clan” would even TRY, let alone LIKE!!!! one of these “newbies” (for us) is QUICHE!!!!

all I’ve heard my whole life is: “real men don’t eat quiche”….and being married to a TRUE country boy, I would have never thought my husband would like it!!! me and my daughter, LesLeigh have ALWAYS wanted to try it, but we’re “chicks”…..so her LAST breakfast before we moved her to graduate school, I made quiche, and let me tell ya…..it was the BOMB DIGGIDY!!!!!

we ALL loved it…..the hubs, me, LesLeigh and clay!!! when I got up to do the dishes afterwords, it was GONE!!!! so this week, I decided I’d TRY and temp all you readers with “country boy” husbands to give it a whirl!!!! ENJOY!!!!

1 UNCOOKED pie shell, placed in tart pan

6-8 eggs, scrambled with a little milk

about 3-4 stalks sautéed asparagus, chopped in bite size pieces

about 1/2 C grated cheddar cheese

4 slices of chopped smoked ham (we used the deli-sliced lunchmeat)

    salt and pepper to taste

place pie crust in tart pan, mold to bottom and sides, place ham, asparagus, cheese, salt and pepper in bowl with scrambled eggs, and mix together, pour into tart pan, place in oven preheated to 400, cook apx 20 minutes, or until crust is golden brown and eggs look “set.” let settle about 5 min and cut into pizza style slices and serve.

    About Wendi Conway

Wendi Conway comes from a long line of cooks and her blog is designed to prove that cooking is not as hard as people seem to think it is. “I love to cook, and it is a passion of mine. Johnny also loves to cook, proving that cooking can’t be too hard if even the men can do it! “I also want to share meals and recipes that can be prepared on a budget. It doesn’t matter where I shop because I build my pantry around what is on sale this week. I enjoy doing it for my family, and I am really proud that I can build memories my children will always have.”
