• Wendi’s Creamy Tacos

    this weeks blog is dedicated to my OLDER (heehee) sister, kristi!!! she live in the mountains in eagle nest, nm and doesn’t get to come down very often (or as often as i would like), but when she does, this is one meal I MUST HAVE READY FOR HER, or i do believe she would just step on the gas and drive right on past the “conway casa”!!!!!

    it’s called “CREAMY TACOS” it’s an EXCELLENT recipe for a large group, because it is so filling, and not too bad on price!!! so ENJOY, everybody, and KRISTI…this one’s for YOU!!!!



    10-12 flour tortillas

    1-1/2lbs cooked ground beef

    1 envelope taco seasoning mix

    prepared queso dip

    grated cheddar cheese


    cook beef just like you’re preparing it for soft tacos, prepare your queso dip (i DO NOT just use rotel & velveeta) i use melted velveeta (milked down a-tad) and sautéed bell peppers, onions, cilantro, cumin

    when the veggies are tender, “fold in” fresh Roma tomatoes (chopped). heat tortillas in microwave to make them soft and “rollable”.

    put about 1/4-1/2 c prepared queso in bottom of 9×13 Pyrex dish, spread over bottom, place apx 2TBSP prepared taco meat in each flour tortilla, roll-up like an enchilada, place in Pyrex dish, continue lining the pan with rolled tortillas filled with taco meat, (pan should look like a pan of enchiladas when done), pour remaining queso ver top of “tacos” sprinkle with grated cheese, garnish with a little cilantro, cover & bake on 350 for 30 min….DO NOT OVER BAKE!!!!!!! you just want the cheese on top to melt and “tacos” to just heat through!!!!

    ENJOY!!! i usually serve this dish with spanish rice and refried beans!!!

    TIP: have tortilla chips on hand, because my family LOVES to dip the chips in the sauce on their plate!!!!
