with summertime upon us, i make ALOT of cold dips/salsas/salads… a few weeks back i posted my SALSA recipe, so this week i decided to post my PICO DE GALLO recipe!! i take it to alot of BBQ’s and serve it on a platter with tortilla chips around it…you can also make it as a topper for enchiladas, tacos, menudo, rice, etc!! it’s a VERY easy recipe and i have gotten RAVE reviews everywhere i take it!! ENJOY!!!!
WENDI’S PICO DE GALLO
8-10 ROMA tomatoes chopped in bite size pieces
1 small PURPLE onion, chopped fine
1 small “bunch” of FRESH cilantro, chopped fine
1 tsp chicken broth
garlic salt to taste
juice from 2 FRESH lemons
juice from 2 limes
add all ingredients together, and place in a resealable container, and stir up….place in fridge overnight to “marry” serve next day chilled!!
